🥑 avocado & 🥚 eggs
Many of you have asked me what we eat when we’re in a hurry but still want it to be healthy and nutritious. Simple, 🥑 avocado and 🥚 eggs! 🤗
NUTRITIONAL BENEFITS
Protein in the morning is a must for anyone planning on using their brain throughout the day. And since this is everyone, EVERYONE needs protein. One egg has 6 grams of protein and an avocado has 2.6 grams of protein. Protein is food for your brain! 🤯
Your brain needs a constant supply of protein from food. Not eating enough protein effects the health of your whole body, including the ability of the neurons in your brain to communicate. Eating protein with every meal helps manage energy levels, blood levels and helps with feeling full.
You may notice that if you don’t eat enough protein in the morning, you end up with a headache, mild dizziness, irritability and sometimes even stomach pains. These symptoms effect both men and women and are often mistaken for something else. If this sounds like you, eat more protein!
EASE OF PREPARATION
My children and I don’t like spending a lot of time in the kitchen and with a family as large as ours, this sometimes happens. So we’re always working on ways to simplify our time in there. This meal is the perfect way to do it.
Total prep time is about 10-15 minutes and a few more if you decide to add bacon. So if you don’t have even that much time in the morning, prepare all the ingredients, except for the avocado, the night before and it will only take you about 5 minutes to put it all together.
Also, if you don’t care for rice cakes, replace them with some homemade flat bread made with rice flour. Some of us are sensitive to oat flour and why we use rice flour instead. It’s a little less messy with the flatbread too. Or forget both the rice cakes and flatbread and simply throw all the ingredients in a bowl and eat it with a fork! 🍽️😄
INGREDIENTS
- 2 boiled eggs
- 1 tomato
- 1 avocado
- 2 rice cakes or flatbread
- 2 bacon / optional
Cut up and layer ingredients on rice cake, flatbread or simply in a bowl and eat! Great recipe for children to make on their own too! ❤️

I started by making salad dressing with the avocado and not long after, they’re all eating it right out of its peel. My youngest even eats it plain! 😁

Honestly, I’m the pickiest eater in my house. 😂 Drove my mother crazy when I was young but it turned out to be allergies. My children will eat anything other than food they have sensitivities to. For example, three of my boys are allergic to coconut.
